Our version of a whole hog share. USDA processed and ready to go! No waiting, no coordinating with the butcher and really convenient pickup options!
140 - 150 lbs. premium cuts, 70-80 lbs. of offals, 210-230 lbs. total
32 Pork chops, 16 rib loin and 16 center loin. Bone-in, 1" thick, 1 per package
16 Shoulder steaks. Bone-in, 1" thick, 1 per package
30 Unseasoned ground pork packages, approx. 1 lb. each
12 Seasoned bulk ground sausage packages, approx. 1 lb. each (choose from any in stock or opt for more unseasoned ground)
2 racks of spare ribs
1 package of country style ribs
5-6 pieces of skin-on fresh belly
6-8 bone-in shoulder roasts
2-3 boneless sirloin roasts
1 boneless leg roast, rolled and netted
4 hocks, 2 sets of trotters, 15 lbs. of bones, 15 lbs. of leaf and/or back fat, 30 lbs. of skin
